Looking for a vegan cookbook for beginners? I recommend Lucy Watson’s Feed Me Vegan. After 25 years of eating dairy, fish and meat, I didn’t know where to begin. I watched the infamous Netflix documentary “Cowspiracy”, and read up on the health benefits linked to plant-based food. I knew I wanted to embrace veganism. But changing my lifestyle to vegan didn’t cancel out my animal produce cravings. I adore pancakes, love a good burger and will devour any cuisine that’s covered in cheese. With Lucy’s vegan recipe book, I learnt that I don’t have to make big compromises. With a few simple tweaks and alterations, I can still enjoy my favourite meals on a vegan diet.
Plant-based cookbook with classic dishes
Lucy Watson is famous for starring on the UK TV series “Made in Chelsea”. Admittedly, this made me question the quality of her book. I always imagined a chef putting together my plant based recipes. But look beyond her celebrity, because “Feed Me Vegan” is a fantastic vegan guide.
The first page features an introduction (the story behind Lucy’s veganism), which follows with a list of suggested store cupboard items and possible locations to source them. The book’s categories include breakfast, quick lunches, feasts, treats, cakes, and snacks & sides. Lucy’s book provides recipes to every classic staples: Pizza, macaroni and cheese, burgers, cheesecakes, korma… you are spoilt for choice.
Vegan recipes: why they are good for beginners
Most recipes are not time-consuming and don’t require numerous ingredients. That’s what makes it perfect for beginners. The instructions are basic and easy to follow, with no fancy, technical wording. On each page, one side features a photo. It’s very hard to flick through the desserts and not feel your mouth water. The ingredients required are mostly products you can purchase from a supermarket. Often with vegan recipes, I find items listed that can only be bought from an expensive health food store.
A vegan cookbook with a no-nonsense approach
In choosing my favourite meals from “Feed Me Vegan”, I would have to list the curries. Routinely, I cook the Tikka Masala, Vegetable Korma and Sweet Potato and Kale Curry. The pizza was one of the most surprising vegan recipes: I never knew how easy it is to make dough. And I have to give favourable mention to the Butternut Squash Lasagne. Most meals (even the typically non-healthy), are packed with veg. It’s nice to eat nutritional produce while also satisfying a craving.
Vegan recipe book: time and skill required
When you first start cooking vegan, you have to retrain your mind. You can’t rely anymore on flavour from cheese, chicken, prawns. So it took me a second to figure how to make my meals tasty. When I bought Lucy’s book, I realised how a shake of soy sauce and a sprinkle of paprika can completely alter a dish.
It’s a vegan cookbook with a no-nonsense approach. The steps are basic and written for a beginner in the kitchen to easily follow. There is no cooking terminology to comprehend and recipes can be whipped up in under an hour. The majority of recipes take from 30 minutes to 1 hour in total. With the curries and stir-fry for example, once you cut your vegetables and add everything to the pan, you can relax and allow your dinner to cook.
Prep-time is super quick which makes it perfect for people who do not want to slave over a hot stove. The banana bread took me no more than 10 minutes to prepare.
How healthy are the vegan cookbook meals?
This book is of course tailored to vegans. Nevertheless, it also makes for a wonderful addition to every kitchen that wants to opt for less animal product and increase plant-based ideas.
What impresses me is the emphasis on healthy eating. So much included, uses legumes, nuts, seeds, fruits and vegetables. In most lunches and dinners, there is at least one huge quantity of vegetable needed. I am eating far more natural ingredients than ever before.
Any room for improvement?
If I had to write a negative, I would opt for more meals and less sides & sides. This is simply a personal preference as I don’t snack often throughout the day. However, I’m sure when I have a party and invite friends over, I’ll be scrolling straight to the snacks & sides category.
Fast & easy vegan cookbook
This is not the world’s healthiest vegan cookbook. Rather, this is a vegan cookbook which provides healthy options for indulging in your cravings. The recipes are filling, satisfying and from what I have made, delicious. If you are looking for easy and tasty vegan options, give this book a try.
My additional point is to mention that the serving sizes are spot-on. When it says that it serves 2 – it serves 2. When it says 6 – it makes 6. It is frustrating when some online recipes declare a portion amount that feels incorrect.
